I began cooking when I was 15 years old.

First, I started with basic breakfast food, but over time I’d begin to experiment. I’d spend hours on a simple dish just for it to taste like salty cardboard.

When I first started cooking, it was because I wanted to eat something fancy.

I had a juvenile understanding of seasonings at best, and had absolutely no cooking etiquette at all.

But I didn’t know that nor would I have cared. Because all I wanted steak with my ramen.

And because of that lack of etiquette and knowledge, I would openly experiment and that’s when it started to be more than just eating fancy food.

You know that feeling you get after taking action on the thing you’ve been overthinking forever?

No lie, that’s how I feel whenever I embark on a new quest to create a dish I’ve never made before. Is that weird? laughs

It’s overwhelming because there are millions of different flavors to choose. Dozens of different cooking approaches. And every little detail matters from the type of pan you choose to the ration of the seasoning.

There are a million things you can do wrong, but only a few things you can do right and the margin for error is miniscule.

Sometimes you buy expensive ingredients which increases the risk and reward at hand.

And the thing I struggled with most.

🎦 Shows me taking out the steak from the sous vide, finishing cooking up side meals, and searing the steak.

Even though cooking can be stressful in of itself, it’s in that stress where I find my reason for living.

While you’re boiling over an oven you might find yourself questioning the point of all of this work. You might even have lost your entire appetite by this point.

But even then, you won’t back out. You’ve already went so far and no amount of your second guessing will lead you to quitting.

This is when motivation betrays you. But. This is also when dedication rewards you.
